I was lucky enough just before Easter to join a handful of other baking bloggers for an afternoon in The Co-operative development kitchens with the delightful Mr Luis Troyano from the Great British Bake Off.
The cookies are packed with dried fruit, mixed spice and, of course, tiny chunks of marzipan- all the key components of a simnel cake. It kind of half melts so you get that lovely almond flavour and nice chewy bits.
They are the perfect antidote to an Easter-induced chocolate overdose – enjoy with a cup of tea or glass of milk, or package them up and give to your marzipan loving friends and family.
It’s beginning to look a lot like Christmas…I was in the baking aisle, making mental notes about festive baking, and when I got to the till these were in my trolley! Festive boozy cranberry cookies were born!
